Strawberry Cake

A lovely creamy strawberry cake for a special occasion.
  •   Tools:

    A cake form 24cm in diameter, small pan

  • 1. Cover the bottom of the cake form with baking paper.
  • 2. Grind the oat and the dates and mix with the almond flour.
  • 3. Melt the butter and mix it with the oat-mix.
  • 4. Put the mix in the cake form and press it down with a spoon. Put the cake form in the fridge for at least 15 minutes.
  • 5. Soak the gelatine in cold water for about 5 minutes.
  • 6. Puree the strawberries and heat half of it in a small pan. Make sure it doesn't boil.
  • 7. Squeeze the gelatine and add to the strawberries in the pan. Stir till the gelatine is dissolved and let the mixture cool off a bit.
  • 8. Take a bowl and mix the remaining pureed strawberries with the yoghurt (or cottage cheese). Add honey to taste.
  • 9. Gently mix the warm strawberries from the pan into the yoghurtmix.
  • 10. Take the cake form out of the fridge and poor the yoghurtmixture in the cake form. Let it set in the fridge for ar least 3 hours.
